Firmly pressed paste cheese, mainly obtained by enzymatic coagulation and ripening with lactic acid bacterial flora.
When maturity is extended over 6 months for the small format and 9 months for large format, is referred to cheeses silver label. They are characterized by a more intense flavor. Salting is of low intensity.
Silver Label: with this format and heavy weight, indicates a maturing over nine months in the cellar of tune.
Shape and rind: cylindrical with rounded edges, you can see the marks of cloth that is used during molding. Smooth natural rind that varies from color to gray straw produced by the surface flora that develops in the ripening rooms.
